Mardi Gras Cajun Chicken Strips with Blue Cheese Dressing

Ingredients:
1 lb boneless chicken tenders
1 tsp paprika
3/4 tsp onion powder
1/2 tsp garlic powder
dash of cayenne pepper
1 tsp fresh ground pepper
1/4 tsp salt
1/4 tsp Italian seasoning

Directions:
Rinse the chicken tenders and pat dry with paper towel
Mix all spices together and sprinkle the spice mixture over the chicken, making sure to coat all pieces well.
Brush the chicken with melted butter or oil.
Grill about 10 minutes or fry in large non-stick skillet in a bit of oil over medium heat until chicken is no longer pink in the middle.
Serve with bottled chunky blue cheese or ranch dressing. Bottled dressing can be found in the produce section of your grocery store.

Party Appetizers - Cold Crab Dip Recipe

A delicious Cold Crab dip is always a Super Bowl party appetizers favorite in our house, but a great cold crab dip recipe should not take you long to prepare and should use only a few ingredients to allow the wonderful taste of the crab meat to come through.

At Appetizers Unlimited, we have tried many a different long and complicated cold crab dip recipe, but in the end we have always found that the simpliest and easiest cold crab dip recipe tastes the best.

With that philosophy in mind, we tried this wonderfully easy cold crab dip recipe courtesy Cooks.com and have now added it to our own repertoire of tried-and-true party appetizers favorites.

COLD CRAB DIP RECIPE

8 oz. cream cheese
4 oz. sour cream
1/2 grated onion
Paprika
Cayenne (red) pepper
1 can crab meat

Blend softened cream cheese with sour cream. Add onion and seasoning. Blend. Then add crab meat. Let stand at least 1/2 hour. Serve with artisan or butter crackers.

Ingredients
1 (10 ounce) box frozen chopped spinach, thawed
1 (14 ounce) can artichoke hearts, drained and roughly chopped
1 cup shredded parmesan-romano cheese mix
1/2 cup shredded mozzarella cheese
10 ounces prepared alfredo sauce
1 teaspoon minced garlic
4 ounces softened cream cheese
pepper (optional)

Directions
1) Preheat oven to 350 degrees.
2) Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish (I used an 8" X 8" dish).
3) Bake for 25-30 minutes or until cheeses are bubbling and melted.
4) Serve with chips or bread and enjoy.

Mardi Gras Appetizers

With the rich and heavy Christmas appetizer recipes filed away for another year, now is the time to try out some delicious Mardi Gras appetizer recipes for the upcoming Mardi Gras Carnival season.

Mardi Gras (Fat Tuesday) is the Tuesday before Ash Wednesday, but the Mardi Gras Carnival season itself runs from January 6th to Mardi Gras day. Mardi Gras appetizers are a wonderful mix of Cajun, Creole and Southern cooking, steeped with amazing flavor and colorful history.

Mardi Gras appetizers are the perfect alternative to the heavy Christmas party appetizers served only a month earlier, but don't relegate them only to the Mardi Gras season as they are suitable for any time of year.

This Cajun Fried Okra Mardi Gras Appetizers recipe, courtesy Paula Deen and Foodnetwork, is certain to be a winner for your Mardi Gras celebrations, or intimate winter dinner parties.

Cajun Fried Okra Mardi Gras Appetizers

Ingredients
6 cups oil, for frying
1/2 cup cornmeal
1 cup all-purpose flour
Directions
2 teaspoons House Seasoning, recipe follows
1/4 teaspoon Cajun spice
2 pounds fresh okra, sliced 1/2-inch thick
1/2 cup buttermilk
Creamy Chili Sauce, recipe follows
Heat oil in a large, heavy-bottomed skillet or Dutch oven to 350 degrees F. (You may not need to use this much oil; do not fill the pan more than halfway up the sides with oil.)
In a medium bowl, combine cornmeal, flour, House Seasoning, and Cajun spice. Dip okra in buttermilk and then dredge in cornmeal-flour mixture to coat well. Carefully add okra to the hot oil and cook until golden brown. (It may be necessary to fry the okra in batches.) Remove from oil, drain on paper towels, and then serve immediately.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
Creamy Chili Sauce:
1 cup mayonnaise
3 tablespoons Thai sweet chili sauce
1 tablespoon garlic chili pepper sauce
1/8 teaspoon ground red pepper
In a small bowl, combine all ingredients, stirring well. Cover and chill.
Yield: 1 1/4 cups
